I'm having regular problems with the G and to some extent B strings on my Casino, I can't work out if it's the tuning peg, nut or combination of them.
It will be below pitch and then kind of "ping" while tuning up and shoot too far, they also struggle with bends.

Almost certainly catching in the nut slot. Too tight/rough/unlubricated. The 'ping' comes from the string section between nut and tuner just like a fairy has lightly plucked it with its delicate pinky. Have you got a picture of the nut?

Well now, those are the strangest nut slots I've seen. Unless it's the lighting they almost look as though they are melted into the nut. Weirdly rounded edges. And there is a severe break angle on that G. They also look very deep, or rather there is a lot of nut material above the string. Take a look at this and see how yours compare: lutherie.net/nuts
And see if you can't get them looking a bit more like this:

Hmm, I will first try a set of 0.011s and if they're still sunk into the nut I think I'll have to get a professional to do it :/
I don't mind soldering electronics but the truss rod and nut fill me with dread.

You could try a very small piece of 800 grit sandpaper fold it in two and very gently move it through the nut slot from the fret side toward the headstock following the break angle as you come out the other side. Try it a few times then tune up to pitch and apply some thumb pressure and push the problem string at the back of the nut to hear if it's still popping/snagging. Just remember a light touch is all that's required.
